While you wait, the owner often offers samples of meats and sausage. You can also pick up a glass of wine or beer for your wait. The food is delicious and the team puts on a show. PRO tip: bring a foldable chair for an option to sit down if it fits your fancy.

More reviews on GoogleI took the Pig Butchery class, and while I enjoyed the overall experience, I’d recommend marketing it more as a social preview into butchery rather than a class. While you do get some insight, it’s not as hands on as I was imagining (we did each get to slice/saw twice). The owner and staff are personable and knowledgeable, but I was hoping to take home more step-by-step tutorials and or hone in more on technique, tools, etc. Again, it’s unique and social! I’d recommend this to someone wanting to have a fun and unique experience that allows you to dip your toes into butchery, as a wine-and-paint class allows you to pretend to be an artist. There were 8 of us there out of the max capacity of 12, so I was hoping to come home with some extra meat! Unfortunately after weighing it all out, it was barely over half of the promoted (approximate) 10lbs. This is considering another friendly guest gave me part of his portions that he didn’t want.
Proletariat’s last Friday burger pop-up is worth marking your calendar for. The patties are thick, juicy, and packed with flavor—one of the best burgers in Portland. Fair warning: the line can take up to an hour, but it’s absolutely worth the wait.
Recently Zeph and his crew catered my father-in-law's birthday and it was a blast. Setting up an outdoor butcher block and wood fire grill, Zeph's showmanship and chef skills were the centerpiece of the party. Fresh tartare, corn on the cob, prosciutto, and one of the best steaks I've ever had were just some of the highlights. Preparing everything in front of us, he pulled volunteers from the crowd to help chop the beef and salt the steaks. His group also ran the bar with a custom cocktail. The party was yesterday and I'm still stuffed. Highly recommend for All Things Meat!
Absolutely Fabulous place. We have been coming for their butchers burgers on the last Friday of every month and enjoying the best burgers in town. This month we decided to join the Sausage and wine club, and it was also amazing! Great fresh made sausages, roasted rabbit, and amazing wines! The owners are amazing and talkative. They will answer questions about the wines or how they prepared certain dishes. I will be staying signed up to the Sausage and wine club. I think my next step is to try one of the butchery classes they offer. This place is awesome and is truly one of Portlands gems!
